The ingredients that you need for this dish are as follows:
- 2 lb. steak. It must be cut into pieces.
- 7 garlic cloves
- ½ white onion
- Sea salt
- 2 bay leaves
- ¾ cup of extra virgin olive oil
- ¾ cup of white wine vinegar
- ¾ cup of safflower oil
- 1 tbsp. brown sugar
- ½ tbsp. ground pepper
- ½ cup red onion
- 8 ounces carrots
- 1 lb. red potatoes
- 1 cup of fresh frozen peas
- 8 ounces green beans
- 4 radishes
Things you need for garnishing are as follows:
- Corn tortillas
- 2 tbsp. chopped cilantro
- 1 avocado. It must be sliced.
The process is explained below:
- First of all, take a large pot and place the meat pieces. Now, add salt, bay leaves, garlic cloves, and white onion. Cover it with a lid and start boiling. Well, you will have to cook it for at least 1 hour. Otherwise, the meat slices will not become soft.
- Now, take another bowl and add sugar, black pepper, salt, 2 garlic cloves, oil, and vinegar. Mix them with a hand blender. Mix them until you get a smooth and puree-like texture. Then, pour this puree into a jar and add the red onions to it. Shake it well and keep the jar aside.
- Now, take another saucepan and then, pour water and salt. Boil it and then add potatoes. After some time, mitigate the heat. Boil the potatoes for at least 20 minutes and then remove them. Now, keep them aside for a while. After that, cut the boiled potatoes into halves. Put them into the bowl and add 1 tbsp. of vinegar.
- After the potatoes, boil the carrots and beans. Now, take a bowl and the boiled carrots and beans. Add some vinegar and toss well. Well, the salad portion is almost ready.
- Now, when the steak is done, take them into a bowl after draining the liquid. Now, add the potatoes, red onions, beans, and carrots. Mix them very well and your dish will be ready.
